SOTO BETAWI

Resep Soto Betawi

Seperti namanya soto betawi merupakan makanan khas yang berasal dari daerah betawi, Jakarta. Meskipun begitu soto ini tidak hanya digemari oleh masyarakat betawi saja karena rasanya yang enak dan lezat. Sama seperti dengan soto madura, resep masakan soto betawi berbahan dasar utama jeroan dengan kuah santan. Berikut ini resep soto betawi lengkap dengan bahan bumbu dan cara membuatnya.
Bahan Soto Betawi:
  • 500 gr jeroan sapi
  • 150 gr daging sapi
  • 5 biji perkedel kentang
  • 1 gelas santan kental
  • 1 sdm bawang merah goreng
  • 1 sdm kecap manis
  • 1 buah jeruk nipis
  • 50 gr emping goreng
  • daun seledri secukupnya, diiris halus
Bumbu Soto Betawi:
  • 7 butir bawang merah
  • 3 siung bawang putih
  • 2 lembar daun jeruk purut
  • 2 helai daun salam
  • 1 batang serai, memarkan
  • 1/2 jari lengkuas
  • 1/2 jari jahe
  • Garam, gula, bumbu penyedap secukupnya
Cara Membuat Soto Betawi:
  1. Bersihkan jeroan sapi, kemudian rebus dengan sedikit garam hingga lunak. Jika sudah setengah lunak, masukkan daging sapi dan rebus kembali hingga daging dan jeroan sapi menjadi lunak. Angkat, tiriskan, kemudian goreng daging dan jeroan hingga setengah kering.
  2. Haluskan semua bumbu kecuali serai, lengkuas, daun jeruk , dan daun salam. Masukkan ke dalam rebusan jeroan dan daging sapi.
  3. Tunggu hingga air tersisa 1 liter dan mendidih. Setelah mendidih, masukkan daun salam, serai, lengkuas, dan daun jeruk purut.
  4. Masukkan santan kental ke dalam air rebusan, kemudian didihkan kembali dan tambahkan bumbu penyedap secukupnya.
Cara Menyajikan Soto Betawi:
  1. Potong tipis- tipis jeroan dan daging sapi, susun dalam mangkok, tuang kuahnya, kemudian taburi bawang goreng, kecap manis, irisan seledri, dan air jeruk nipis.
  2. Sajikan panas- panas dengan lontong atau nasi, perkedel, emping, dan sambal soto.
